Chayote Pie
Ingredients:
- 2 large green, black chayotes.
- 1 tablespoon unsalted margarine or butter.
- 2 eggs.
- 1 tablespoon sugar
- 1 teaspoon cinnamon
- 1 tablespoon bread crumbs
- ¼ teaspoon cream of tartar, whipped cream or meringue.
- Extra sugar and cinnamon for sprinkling.

Procedure:
- Preheat the oven to 350 °F. Grease and flour a small baking pan, not too high.
- Place the chayotes in a pot and cover with water. Cook over medium-high heat until soft, but still firm. Peel them and, while still warm, cut them in half, remove the seeds and press them over a bowl until they are mashed.
- Finely chop the chayote seeds and add them to the puree along with the margarine.
- Separately, beat the egg yolks, sugar, cinnamon and bread crumbs. Add to the chayote puree.
- Beat the egg whites separately together with the cream of tartar until it reaches the nougat point. Separate 2 tablespoons and wrap the rest in the chayote mixture.
- Pour into the mold and cover with the nougat you separated.
- Sprinkle with sugar and cinnamon and bake for approximately 30 minutes or until golden brown.
