Tamales

Ingredients:

Filling:

  • 1 pound solid pork or chicken meat
  • 2 onions
  • 2 cups of crushed and strained tomatoes
  • 2 cloves of garlic
  • Salt to taste
  • 1 tablespoon corn oil or lard oil
  • 3 tablespoons of chopped cilantro

Tamales:

  • 1 pound of tortilla dough
  • ½ cup lard
  • Salt to taste
  • 3 large plantain leaves

Procedure:

Filling:

  • Cook the meat or chicken in water that covers it with an onion cut in two, a clove of garlic and salt to taste, until it is soft.
  • Let it cool a little and shred it. Heat the oil or lard in a saucepan, add the other onion and the finely chopped garlic, let it sauté and add the meat.
  • Fry for 2 minutes and add the tomato, cilantro and salt to taste. Let it simmer for about 10 minutes or until the tomato is well cooked and thickened. This is used to fill the tamales.

Tamales:

  • Beat the masa with the lard (reserve 2 tablespoons) and salt to taste until fluffy, about 5 minutes.
  • Pass the banana leaves directly over the flame for a few seconds to soften them and work with them. Cut a large leaf into squares of 6 inches on each side, grease the outside with the remaining butter, place a little dough on each leaf and half a spoonful of the filling on top of the dough.
  • Fold the leaves towards the center, so that they enclose the filling in a tight rectangle. If desired, each piece of tamale can be tied with a banana leaf strip.
  • Put 4 cups of water and a bed of banana leaves in a tamalera or in a steamer, place the tamales on it, cover the tamalera and cook the tamales for 1 hour, a large leaf in squares of 6 inches on each side, grease the outside with the remaining lard, place a little dough on each leaf and half a spoonful of the filling on top of the dough. Fold the leaves towards the center, so that they enclose the filling in a tight rectangle. If desired, each tamale can be tied with a banana leaf strip.
